I bought some green tomatoes from the grocery store and didn’t know what else to do with them but try to make a healthier version of the classic Fried Green Tomatoes.

I used the same coating and technique I used with my Vegan Oven Baked Zucchini Chips recipe and it worked perfectly.

So now, we have Healthy Oven Baked Green Tomatoes to enjoy!

I wanted a tangy and tart dip to go with them so I paired it with this Raw Vegan Roma Tomato and Tahini Dressing and it was a match made in heaven!

Not only are Fried Green Tomatoes unhealthy because they are “fried”, but they are made with white flour and eggs and are not vegan or gluten-free.

Here are some ingredients found in a traditional fried green tomato recipe:

 

S.A.D. (Standard American Diet) Fried Green Tomato Ingredients:

Ingredients:  white flour, eggs, milk, cornmeal, breadcrumbs, vegetable oil (for frying)

 

This healthier version is baked and is vegan, gluten-free, dairy-free and paleo-friendly too!

Healthy Oven Baked Green Tomatoes (Vegan, Gluten-Free, Dairy-Free, Paleo-Friendly)

Ingredients

  • 2 Large organic green tomatoes
  • 1/2 cup homemade almond milk
  • 1/2 cup organic almond flour
  • 1/2 cup nutritional yeast
  • 1/2 teaspoon organic garlic powder
  • 1/2 teaspoon Himalayan pink salt
  • 1/4 - 1/2 teaspoon organic ground cayenne pepper

Directions

Step 1 Slice the green tomatoes into thick slices.

Pour the almond milk into a small bowl, set aside.

Add the almond flour, garlic powder, pink himalayan salt, cayenne pepper and nutritional yeast in a medium sized bowl and stir until well combined.

Dip the tomato slices (one at a time) into the almond milk, then into the coating mixture covering both sides completely.

Put on a baking tray and bake at 425 degrees for approximately 15 - 20 minutes or until golden brown.

Serve with your favorite dip and they are best when served hot.

This recipe will make approximately 8 - 10 tomatoes.

Raw Vegan Roma Tomato and Tahini Dressing (Raw, Vegan, Gluten-Free, Dairy-Free, Paleo-Friendly)

Ingredients

  • 1 organic roma tomato (cut into 4 - 8 pieces)
  • 1/3 cup organic tahini
  • 1 1/2 tablespoon Bragg organic apple cider vinegar
  • 1/2 teaspoon Himalayan pink salt
  • 1 pinch organic ground cayenne pepper

Directions

Step 1 Put all ingredients into a Vitamix and blend until smooth and creamy.

Enjoy!
