You may be wondering why my Rosemary and Garlic Sweet Potato Medallions in the photo do not look like sweet potatoes.

I know it looks sketchy, but here’s the story.

I’ve made these so many times I don’t know why I never photographed and shared them until now.

But that’s where it all started, when I decided to buy sweet potatoes at the spur of the moment.

On rare occasions, I run into the grocery store without a list and just start grabbing what I can remember I need.

Well it just so happened that the day I bought these “sweet potatoes”, I saw them, made sure they were organic, grabbed them, and brought them home (after paying for them, of course!)

I had to do a double-take after I started slicing them to make sure I didn’t mistakenly started slicing a white potato.

Apparently, there is such a thing as  “white” sweet potatoes.

The outside looks like a regular sweet potato and to me they taste like a regular sweet potato…but the insides are white.

So while I wanted to showcase the original “orange” sweet potato, these taste the same, but just look different.

Rosemary and Garlic Sweet Potato Medallions (Vegan, Gluten-Free, Dairy-Free, Paleo-Friendly)

Ingredients

  • 2 organic sweet potatoes (50 - 60 slices)
  • 2 tablespoons organic extra-virgin olive oil
  • 1 tablespoon organic dried rosemary
  • 1 teaspoon organic ground garlic powder
  • 1/2 teaspoon Himalayan pink salt

Directions

Prepare the potatoes
Step 1 Wash and dry the potatoes then slice into 1/4 inch sliced (not too thin).

Add them to a medium sized bowl and toss with the olive oil until all pieces are covered.

Set aside.
Prepare the seasoning
Step 2 In a small bowl, add the garlic powder, dried rosemary and Himalayan pink salt and stir until well combined.
Step 3 Sprinkle the seasoning mixture over the slice potatoes and gently stir until it is evenly distributed and all pieces are covered.

Spread the potato sliced onto a baking tray and bake at 400 degrees for approximately 15 - 20 minutes, or until they are completely cooked.

Enjoy!

This recipe will make approximately 2 - 4 servings.
