These healthy Gluten-Free Vegan Oven-Baked Avocado Fries are my submission for the March 2017 Recipe Redux theme and are so easy to make.
The theme this month is:
“Spring Clean the Kitchen – Cook with at least 3 ingredients that are actually in your refrigerator or pantry right now. Try not to go to the store to buy anything new. Give tips on how to make a healthy dish out of whatever you have on-hand.”
I actually have all these ingredients for this recipe on hand at all times because a) there are just a few ingredients to the recipe and b) they are all staple ingredients in a healthy kitchen.
This entire recipe takes about 20 minutes to make from start to finish and they will be gone in less than 2 minutes!
When I make these, I use my homemade gluten-free bread crumb mix and if you already have some pre-made, it will save you a few extra minutes in prep time.
They are really, really good with a homemade dressing or sauce like this Creamy Habanero Dressing (hot!), Smoked Paprika Habanero Sauce, Raw Vegan Creamy Chipotle Dressing or Healthy Honey Mustard Dressing (not vegan).
Baking them in the oven is much healthier than frying and they’re vegan, gluten-free, dairy-free, egg-free and paleo-friendly.

Total time | 20 minutes |

Ingredients
- 2 organic avocados (firm, slightly underripe)
- 1/2 cup homemade almond milk
For the coating
- 1/2 cup almond flour (super finely ground)
- 2 tablespoons nutritional yeast
- 1/2 teaspoon organic ground smoked paprika
- 1/2 teaspoon organic ground garlic powder
- 1/2 teaspoon Himalayan pink salt
Directions
Prepare the coating | |
Step 1 | Add all ingredients for the coating mixture to a small bowl and stir until everything is well combined. Set aside. Optional: for a spicy coating, add 1/2 teaspoon organic ground chipotle powder |
Prepare the avocados | |
Step 2 | Note: It's important that you use firm, slightly underripe avocados for best results. Slice the avocado in half and remove the pit. Slice the avocado from top to bottom into 3 - 4 thick strips (depending on the size of your avocado). Set aside. |
Assembly | |
Step 3 | Add the homemade almond milk (or your favorite non-dairy milk) to a small bowl. Make an assembly line from left to right: sliced avocados, bowl of milk, bowl of coating mixture, baking pan lined with parchment paper. Dip each avocado slice into the bowl of milk, then into the bowl of coating mixture, then place onto the baking pan. Continue until all are done. Bake at 420 degrees for approximately 15 -17 minutes, or until coating is golden brown, taking care not to over bake. Serve with your favorite dip or sauce and they are best when served hot right from the oven. Enjoy! |
Note
This recipe will make approximately 2 -4 servings.
